Are you a Taco Lover like I am? If so your world is about to be rocked!

I absolutely love tacos, burritos, taco bowls, enchiladas, empanadas …basically if it can be paired with some sour cream and guacamole you can find me near by with some tortilla chips. My entire pregnancy with Westley I probably had some variation of tacos on a weekly basis. Unfortunately, having your third child means that while my heart is full of love my days are NOT filled with a lot of extra time!

Between homeschool lessons with Ada, blogging, playing outside, going for walks and you know, keeping the kids alive, I don’t always have time to plan dinner out like I should. 4 PM rolls around, Jays asks me what we are having for dinner and then it hits me that I forgot to pull chicken or something out of the freezer. I’m sure SO many of you busy mom’s and dad’s can relate, right?

Well, y’all, I have a pretty awesome solution for you!

There I was, in that “oh no, I forgot to plan dinner” predicament. What’s a mom to do?

Well, I had some of these Frontera Taco Bowls that I had picked up in the frozen meals section of my local Kroger in our freezer and decided to whip them up… and by whip them up I mean toss into the microwave for all of 5 minutes each. MY MIND WAS BLOWN. I am crazy picky. I am the annoying patron at the restaurant who says “I would like this, but without this, and can you substitute this and put this on the side please?”. That being said. Peppers? Onions? No way, Jose. HOWEVER when it is something that is done right, I can eat every bite, and I was super tempted to not lick the bowl here.

We had two different options on hand:

The Tinga Taco Bowl- an authentic recipe from the highlands around Mexico City, made with seasoned, roasted tomatoes, chipotle chile and slow simmered chicken and

The Brbacoa Taco Bowl- A signature dish of central Mexico with tender roasted beef that is then cooked with ancho, guajillo and chipotle chiles (and is my FAVORITE!).

These delicious meals, full of authentic flavors are SO easy to prepare.

Open the box and remove the bowl.

Place into the microwave for a few minutes and stir halfway through the cook time.

Remove bowl, transfer to your favorite bowl.

Stir in and stand out!

Its that simple, and my entire family devoured these meals!

I decided since Frontera was doing all of the “hard work” for me as far as the main course was concerned, I had time to whip up a family favorite! Tortilla chips and fresh guacamole!

 As I mentioned before, I LOVE tacos! Which means we always have tortillas in our house! Making the tortilla chips is easy and it was a perfect side to these delicious Frontera meals!

For the small side you see in the photo I used 4 flour tortillas and cut them into 8 triangles. Then you lay them out on a foil lined baking sheet and brush with olive oil. Sprinkle them with some cumin and garlic salt and pop into a 400 degree oven until they start to get a beautiful golden color then pull them out and sprinkle lightly with sea salt.

For the Guacamole pictured here I used 2 ripe avocados, the zest and juice of one lime, garlic salt and fresh pepper. I use a bowl and a fork mash and mix until the guacamole is the consistency we like!

 There you have it, a dinner that impressed my husband, that didn’t require me to spend all night in the kitchen. Meaning more time to hold my baby, more time to talk with my husband, more time to color with my little ones. We all have those busy moments, right?
