Ice Cream and Strudel for Breakfast?!

You’ve heard about breakfast for dinner, but what about dessert for breakfast?

I played up this take on my homemade strudel recipe to celebrate National Ice Cream Day!

So yes, technically it is still a breakfast item, but a strudel is so versatile, right?

Rather than using whipped cream, I used our FAVORITE Strawberry ice cream from Halo Top Creamery!

I’m all about using every last bit of the groceries we buy. I can not stand seeing food go to waste!

When our produce starts to soften, I always try to either freeze it for smoothies, juice it, or bake with it!

So many people are intimidated by baking, by puff pastry specifically.

I see you. I used to BE you!

But y’all it is SO easy and can be whipped up in 15 minutes! No joke. Just 15 minutes for a beautifully flaky puff pastry dough.

Forget that freezer aisle dough, once you see how easy it is you will never turn back!

The dough itself is 4 ingredients, that’s it. I’m willing to bet you have them already in your home.

Ready?

1 cup of Flour. 1/4 teaspoon Salt. 10 tablespoons of Butter. 1/3 icy coldĀ Water.

Say whhhhhat?

Yes.

You add the flour and salt and mix it. Then add your cold, cubed butter and use your pastry blender or two butter knives to cut the butter into the dough.

Next you make a well in the middle and add that cold water and mix it all gently with a fork until the dough forms.

Flour your cutting board and pop that dough on there and shape into a square.

(like that baby bump?)

Now take your rolling pin and roll the dough into about a 10-12″ rectangle. fold into thirds and rotate it and repeat.

I’d say to repeat it 5-7 times.

You will want to wrap your dough in plastic wrap and refrigerate it for at least an hour.

Now we are ready to fill these!

The possibilities really are endless, especially when you’re thinking to pair it with some dreamy, creamy Halo Top!

See what I mean, I need to go make some more dough now!

I was using up produce, SO I put strawberries and blueberries into mine. Strawberries and cream cheese would be great too but I was trying to stay healthy!

I cut the dough into thirds and rolled it a bit thinner (just a bit!) and added my berries.

I also used a drizzle of raw local honey rather than using sugar.

Fold the dough over and use a fork along the edges to seal.

The dough recipe is enough for three really good sized strudel.

Brush with 1 beaten egg yolk and add a few slits into the top.

Put into a 400 degree oven for about 15-18 minutes, or until golden brown.

I dusted mine with some powdered sugar but you can get creative! A cream cheese frosting drizzle or chocolate syrup would be SO decadent!

Top with your favorite Halo Top Creamery ice cream and you are READY to enjoy!

Seriously, I cant believe I had the patience to take this photo because the smells were incredible!
