Halo Top Creamery Oatmeal Cookie Ice Cream Bars

 I LOVE ice cream year round

But there is something about having a good frozen treat in the summer months that is just SO much more satisfying, am I right?

First things first, lets talk about  this brand- Halo Top Creamery really quickly! Do you see that 280 on the pint? That is how many calories are in the ENTIRE PINT! The caloric numbers vary between the different flavors but the highest amount of calories you will see printed on those pretty pints is 360!How amazing is that?! Not only is it low in calories, but each pint also contains 20g+ of PROTEIN!

WELL how about if I sweeten it a bit more for you? Naturally, of course because that’s just how Halo Top Creamery works! In these many flavors of low-cal frozen goodness, you will find organic STEVIA as a sugar replacement as well as Erythritol, which is an all natural sweetener found in fruits like pears and grapes. The plus side? It won’t effect blood glucose or cause bloating the way other sugars do!

I plan to taste test my way through the Halo Top fleet, but to date I have tried the S’mores, the Chocolate Almond Crunch and the Oatmeal Cookie! None of these flavors have let me down yet!

I am a mom. I have tiny people on me constantly, and I have one little human growing inside me. NOTHING these days is just mine. I have been known to put those kiddos to bed early, put on some Netflix and chill with nothing but my favorite pair of sweats, a pint of Halo Top and good ole spoon. Peace and quiet. Me and that pint. No sharing required.

But the other night I got to thinking, this ice cream has SO many possibilities!

I LOVE ice cream sandwiches, but they are PACKED with artificial YUCK and usually contain sweet, horrible ice cream that is just not good for you at all. We all have our vices, I know, and I’m sure a lot of you don’t mind that preservative filled sandwich every once in a while, but what if I told you that you can make a super quick frozen treat and MAJORLY cut the calories and all of the artificial ingredients? A sweet frozen treat you can feel GUILT FREE eating?!

Introducing my Halo Top Creamery Oatmeal Cookie Ice Cream Bars.

Yeah, its a mouthful… which is exactly what you’re going to want once you taste these bad boys!

I used a favorite oatmeal cookie recipe with healthier ingredients such as organic oats, ground flax seed and honey (in place of white sugar), but feel free to use your favorite!

For the cookie:
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1 cup light or dark brown sugar
  • 1/4 cup honey (I use local raw)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups organic all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon good ground cinnamon
  • 3 cups old-fashioned rolled oats
  • 3 tablespoons cup ground flax seed

 

You’re going to want to get a spring form pan if you don’t already have one. This makes it WAY easier to take the frozen treat out and cut it into single servings!

Spread most your oatmeal cookie dough into the bottom of your non-stick spring form pan and press so it is all even and flat. Bake at 350*F for about 10-15 minutes or until the cookie looks like it is starting to become golden. Remove spring form pan and put the remaining dough into the oven on a parchment lined baking sheet until golden. Once you remove and cool the cookies, crumble those bad boys up for a delicious topping!

Once you take the big cookie out, sprinkle dark chocolate chips over the top and let them melt, use a rubber spatula to spread the melted chocolate evenly and allow to cool. Once the cookie  has cooled, scoop all of the Halo Top Creamery Oatmeal Cookie flavor ice cream onto the cookie and spread with the spatula so the ice cream has an even layer. Sprinkle the cookie crumbs over the top, line the top of the entire thing with plastic wrap and freeze until firm again.

Remove from freezer and unhinge the spring form pan and remove the frozen deliciousness that you are so close to consuming!

Cut into personal sized portions! If not serving them all right away, wrap in parchment and plastic wrap and pop in the freezer for easy and convenient access to an amazing and quick dessert any time of the week!

These are SURE to be a hit within your family or for a great summer BBQ! They were definitely a wonderful way to end Mother’s Day yesterday! As “healthy” as they are, they got the stamp of approval from both of my kiddos as well as my super picky- anti health food husband!

      Natalie, they are SO good! For my youngest, when I take he bar out of the freezer I cut it into bite size pieces, he loves them! They’ve become a huge hit in our family! Be sure to come back and let me know what you think!
